Recipe: No-Spread Gingerbread
For the patterns to stay sharp, use a dough that doesn't rise too much.

Ingredients:
- 100g Sugar
- 165g Honey or Molasses
- 1.5 tsp Ginger + 1 tsp Cinnamon + 1 tsp Cloves
- 2 tsp Baking Soda
- 125g Butter (Cubed, cold)
- 1 Egg
- 500-600g All Purpose Flour
Instructions:
Heat sugar, honey, and spices in a pot until sugar dissolves/boils. Remove from heat and stir in baking soda (it will foam). Add the cold butter and stir until melted. Add the egg and mix. Gradually add flour until you have a workable dough. Chill for 30 mins before pressing into molds. Bake at 350°F (175°C) for 7-10 minutes.

Common Questions (Q&A)
Q: How do I prevent the dough from sticking?
A: The most important step is to "season" your mold. Lightly brush it with vegetable oil before the first use. For every subsequent cookie, dust the mold lightly with flour before pressing the dough in.
Q: How do I clean the mold?
A: Do not put wooden molds in the dishwasher. Clean with a dry brush or a damp cloth. If you must wash it, use warm water and dry it immediately with a towel, then let it air dry completely. You can re-apply flaxseed oil occasionally to keep the wood in good condition.
